Spring Green Salad

As it’s Bank Holiday I’ve decided to leave orders open until 6pm on Tuesday! The items on the menu this week have a slight Indian flavour running throughout them with curried chickpeas, juicy mango and fresh coconut. My blog this week is to help you create an exciting green salad rather than just throwing a bit of lettuce and cucumber into a bowl. It’s simple to prepare, tastes delicious and adds a bit of excitement to your lunch box.

 

 

Ingredients (makes 1 large bowlful)

X1 bag of mixed leaves

X1 packet green beans, trimmed

X1 packet sugar snap peas

X1 packet mangetout

X1 orange

X2 tbsp olive oil

Black pepper

Handful of sunflower and pumpkin seeds

Sprinkle chilli flakes

 

Method

Bring a large pan of salted water to the boil and add the trimmed green beans and sugar snap peas. Boil for 3 minutes before adding the mangetout. Continue cooking for 1 more minute before draining and running under cold water until the veg is cool.

 

Place the salad leaves in a large bowl with the cooked veg. Zest the orange into the bowl and then add the juice. Mix in the olive oil, a pinch of black pepper and the seeds. Sprinkle over the chilli flakes.

 

Simple, easy & delicious!
