This is a very easy salad to make but is really tasty. I made it for our last yoga day and lots of our students commented how much they liked it. Apart from cooking the quinoa (or you could buy ready cooked), you just do a bit of chopping and chuck everything together. The citrus dressing really brings the salad together making it a delicious meal which is also very nutritious.
Ingredients (makes 4 portions)
3 handfuls spinach
2 oranges (zest & juice)
3 tbsp olive oil
2 tbsp tahini
Cook the quinoa as per packet instructions. Whilst cooking, remove the seeds of the pomegranate by cutting it into quarters. Place the quarters in a large bowl of water and gently massage each section to release the seeds. The seeds should sink and any skin float to the top.Scoop off the skin and dispose and drain the water leaving just the seeds.
Place the quinoa into a large serving bowl. Add the spinach and pomegranate seeds. Roughly chop the avocado, pecans and apples and add these to the bowl. Gently mix everything together.
Make the dressing by placing all the ingredients into a jug and whisk together using a fork. Drizzle over the salad and top with a little more orange zest before serving.
