Energy Balls are the perfect on the go snack for when you need a little pick me up. They are quick and easy to make and last for ages in the fridge. This means you can make a large batch so you always have a supply in. Watch out for the Energy Boost Balls on my menu, each week I offer an exciting new flavour for you to try.
Recipe (makes 20 balls)
400g medjool dates
x1 tbsp flax seed
x1 tsp vanilla essence
40g sunflower seeds
40g pumpkin seeds
x1 tbsp tahini
75g sesame seeds
Remove the stones from the middle of the dates.
Place all the ingredients, apart from the sesame seeds, into a food processor and blitz until combined and sticky. Pinch sections of the mixture off and roll between your hands to form 20 equal sized balls.
Place the sesame seeds into a bowl and roll each ball in the seeds until coated. Keep in an airtight container in the fridge.
