Energy balls are so quick to make and great to have at arms reach. Being diabetic, I have to constantly keep control of my blood sugars so if they start to drop an energy ball can boost them back up to where they need to be. They have sweetness from dates and slow releasing energy from the oats so work perfectly as a mid morning snack or a little treat after lunch. If you are gluten free please miss out the oats and increase the nuts and dates a little.

A few weeks ago on my menu were these delicious energy balls. They consisted of a base of cacao, almonds, dates, oats, peanut butter and coconut oil which were blended togther and rolled into balls. I then blitz some freeze-dried strawberry pieces into powder and rolled the balls in this. As well as looking great, they also gave you that dark chocolate hit with the added sweetness and flavour of the strawberries.

This recipe is the one I always use to make a basic houmous. Its light and creamy and can be easily changed by adding some roasted veg or extra spice. If you blend it well you'll have a smooth consistency but sometimes its nice to have a bit of texture so try not to over mix.
