This is a recipe for one of my favourite salads I've made over the past few weeks. We have so many tomatoes in the garden at the moment so it's a great way to use them up. You can serve this salad as a main at lunchtime or it'll make a great side salad to accompany a BBQ.

This salad is great for summer and will go down very well as a BBQ side dish. Juicy watermelon goes perfectly with salty halloumi, bitter chicory leaves, crunchy pine nuts and a chilli hit.

Beetroot & Feta Fritters. These fritters are moist and full of flavour. They can be made small or large and are great as part of a meal or a snack. Serve them with pitta bread, humous and salad for a tasty lunch.

It may be getting sunnier but we still love to have a bowl of soup for lunch. I wondered as it got nearer to summer whether people would still order it off my weekly menu. Luckily they do, which means I make a bit extra for us to have over the next few days. Last weeks cauliflower & coconut was one of my favourite with its creamy texture and subtle spicy flavour. I served it with a toasted coconut flake and chilli seed sprinkle to add a bit of texture and heat to the dish.

Kale is a great vegetable, full of beneficial nutrients and in season at the moment, but sometimes it can be a little boring. Normally it is just steamed and added to the side of your meal and you may eat it because you know its good for you but really its not your favourite. Sound familiar?

Last week it was 7 months since I was diagnosed with Type 1 Diabetes. After being flown home early from holiday due to being very poorly, Mum took me to the doctors and they sent me home not knowing what was wrong. Rather than going straight home, we called in at Leadenham Teahouse and I had a huge hot chocolate and slice of cake to try and make me feel better. This of course made me feel so much worse (whoops) and when we walked into the house the phone was ringing and it was the doctor asking me to go straight back in as he thought I had Type 1!

A week today I'll be 'popping-up' at The Leadenham Teahouse. My first thought this morning was...'what happens if we still have snow and no one comes!' But I can't change the weather or if no one stops by so I'm not going to worry. I am really excited for what the week will bring as many of you know it is my dream to have my own little cafe some day.
