The past five weeks have absolutely flown by and it’s been such a joy to explore this beautiful country with my parents. It all started with an emotional reuniting at Christchurch airport where Mum and Dad were waiting for me with plenty of hugs. We had a night in Christchurch catching up with an old friend who I haven’t seen in 15 years before heading off to pick up the campervan. It’s definitely the best way to see the country and also a lot of fun too. Living in one room all together for 5 weeks was certainly going to be an adventure.

This is a recipe for one of my favourite salads I've made over the past few weeks. We have so many tomatoes in the garden at the moment so it's a great way to use them up. You can serve this salad as a main at lunchtime or it'll make a great side salad to accompany a BBQ.

This salad is great for summer and will go down very well as a BBQ side dish. Juicy watermelon goes perfectly with salty halloumi, bitter chicory leaves, crunchy pine nuts and a chilli hit.

As some of you may already know, Mum has recently become a bee keeper and we now have our first batch of honey! Unfortunately for me I can only have it when my blood sugars drop but I can assure you it's absolutely delicious. Mum has written a few words below about the world of bees...

Beetroot & Feta Fritters. These fritters are moist and full of flavour. They can be made small or large and are great as part of a meal or a snack. Serve them with pitta bread, humous and salad for a tasty lunch.

It may be getting sunnier but we still love to have a bowl of soup for lunch. I wondered as it got nearer to summer whether people would still order it off my weekly menu. Luckily they do, which means I make a bit extra for us to have over the next few days. Last weeks cauliflower & coconut was one of my favourite with its creamy texture and subtle spicy flavour. I served it with a toasted coconut flake and chilli seed sprinkle to add a bit of texture and heat to the dish.

Energy balls are so quick to make and great to have at arms reach. Being diabetic, I have to constantly keep control of my blood sugars so if they start to drop an energy ball can boost them back up to where they need to be. They have sweetness from dates and slow releasing energy from the oats so work perfectly as a mid morning snack or a little treat after lunch. If you are gluten free please miss out the oats and increase the nuts and dates a little.

My blog this week is to help you create an exciting green salad rather than just throwing a bit of lettuce and cucumber into a bowl. It’s simple to prepare, tastes delicious and adds a bit of excitement to your salad bowl.

I thought it was about time I shared another delicious recipe with you all. This was on my menu a few weeks ago and I received lots of lovely comments about how much people had enjoyed it.

Kale is a great vegetable, full of beneficial nutrients and in season at the moment, but sometimes it can be a little boring. Normally it is just steamed and added to the side of your meal and you may eat it because you know its good for you but really its not your favourite. Sound familiar?
